Time for another dram!
An Australian Grain Whiskey matured in red wine, bourbon and Muscat casks

A bit about
Made for Whisky52, this whiskey has 46% ABV, and it was aged in red wine and bourbon casks, then finished in South Australian aged and rare Muscat Casks.
The artwork on the label is by Jerry Lee Bosmans.
78 Degrees Distillery was founded in 2014, and it is located in the Adelaide Hills region of South Australia. With the name referring to the boiling point of ethanol, 78 Degrees produces gin, vermouth, vodka, aperitifs and Australian whiskey.
They use local barley, a roller mill, and distil the wash on husk. They also do a 'single-shot distillation' by using a hybrid pot and column still.
Since their launch, they have won a few awards, such as Bronze (in 2022) and Silver (in 2023) at the San Francisco World Spirits Competition for their Australian Whiskey, Native Grain Whiskey and their Muscat Finish Whiskey.

Time to try it!
Nose: Sweet, with ginger spice, cinnamon, star anise, apricot and a bit of cocoa. Feels like a rye whiskey at first nosing
Palate: On the sweet side (heavy muscat cask influence), peppery, with pear and apricot and winter spice (as on the nose)
Finish: Medium, with dried fruit sweetness and lingering spice

Pros and Cons/ In Conclusion
I didn't know this distillery existed until the bottle arrived at my house via the subscription service called Whisky 52, but I'm happy to have found it.
This particular whiskey isn't necessarily to my taste, as it's way too sweet for me and I'm not particularly fond of the nose (too many layers at the same time, not balanced well enough), but I like seeing more countries out there experimenting with different grains and methods.
