Stauning R.Y.E Maple Syrup Cask - Whisky Review

Stauning Rye Maple Syrup Cask Finish Review: Vermont Sweetness Meets Danish Craft
Time for another dram!
Following up on the powerhouse Stauning R.Y.E. Cask Strength, we are heading right back to the west coast of Jutland in Denmark for a completely different expression of their grain craft.
While experimental cask finishes can sometimes turn into gimmicky sugar bombs, Stauning Rye Maple Syrup Cask looked far too intriguing to pass up. Matured initially in heavily charred virgin American oak, this limited release spent a secondary finishing period in first-fill maple syrup casks sourced directly from Vermont.
Bottled at a sturdy 53.5% ABV using their signature direct-fired copper pot stills and 100% local floor-malted grain, this bottling aims to bridge rustic Nordic rye spice with deep, unctuous North American sweetness.
Here is my honest breakdown, complete tasting notes neat versus with water, and my final verdict on how this maple finish holds up.

What is Stauning Rye Maple Syrup Cask?
(Distillery & Cask Details)
Stauning's philosophy is rooted in grain-to-glass transparency, using locally harvested Danish rye and barley malted in-house on their bespoke automated malting floors before distillation in 24 small direct-fired pot stills.
For this limited edition, Stauning partnered with traditional maple producers in Vermont, USA:
The Primary Ageing: The spirit spends its initial years maturing in virgin American white oak barrels, developing a foundation of toasted wood, vanilla, and fresh baking spices.
The Finish: It is transferred into first-fill casks that previously held pure Vermont maple syrup. The porous oak staves infuse the whisky with natural maple sugars, dark toffee, and rich caramel without requiring any artificial flavourings or syrups.

Stauning Rye Maple Syrup Cask Flavour Profile & Tasting Notes
Time to try it!
Poured into the glass, the whisky displays a deep, radiant amber hue with a rich, glossy cling along the Glencairn walls.
The Nose
Wonderfully aromatic and inviting right away. Given that it was finished in maple syrup casks, you might brace yourself for a cloying, syrupy blast—but it isn't horrifyingly sweet at all. It is pleasantly, gracefully sweet.
A few friends who tried it mentioned it immediately made them think of a hearty breakfast, and that is spot on: you get genuine maple syrup drizzled over warm pancakes. Running beneath the maple sweetness is a solid backbone of fresh rye bread, gentle baking spice, and toasted oak that keeps the aroma grounded and refined.
The Palate
The arrival is where the balance really shines. It is nowhere near as sweet on the palate as the nose suggests, which makes the whole sip significantly more enjoyable.
The maple syrup is present, but it acts as a rich layer rather than a sugary mask. Waves of deep vanilla cream and dark, chewy caramel hit first, followed closely by dry toasted oak and warming rye spices. The direct-fire distillation gives the body a substantial, chewy texture. It is well-balanced, avoiding any sticky cloyness and allowing the malted grain character to speak for itself.
The Finish
A long, satisfying finish. Neatly sipped, the arrival and mid-palate feel slightly rougher and spicier across the tongue due to that 53.5% ABV. As it settles, it glides into a smooth, creamy sensation, leaving lingering toasted oak, rich dark caramel, and a gentle tingle of rye spice that warms the throat.

Adding Water: What Changes?
At 53.5% ABV, a couple of drops of water can be very helpful:
Neat Pour: Drinks with fantastic body and bold weight, though the alcohol prickle on the mid-palate makes itself known.
With Water Added: Adding just two or three drops of water tones down that initial alcoholic roughness and rounds out the edges. It makes the palate noticeably more mellow and velvety, letting the creamy caramel, oak, and soft vanilla open up without dampening the maple aroma.
Final Verdict: Is Stauning Rye Maple Syrup Cask Worth It?
Stauning Rye Maple Syrup Cask is a triumph of thoughtful cask finishing, and easily one of my personal favourites from the Stauning portfolio.
Instead of letting the Vermont maple casks completely overpower the spirit, the natural spice of their floor-malted Danish rye holds its ground, creating a harmonious tug-of-war between warm spice and rich breakfast-like sweetness.
It lives up entirely to its label description: this is the quintessential, decadent after-dinner dram to sip slowly by the fire.
