Homemade Crackers with Cheese and Olives Recipe

You will need:

ingredients for Homemade Crackers with Cheese and Olives

  • 1 cup all-purpose flour

  • 1/2 cup grated cheese

  • 5-6 large olives chopped

  • 1 tsp sugar

  • 1 tsp salt

  • 3-4 tbsp water

  • 5 tsp olive oil

How to:

  1. Preheat the oven to 180C/gas 4

  2. Mix all ingredients in a bowl

  3. Roll the dough to 1/2 cm thickness

  4. Using a knife or pizza cutter, cut the dough into squares

  5. Place the squares on a tray lined with baking parchment

  6. Bake for 8-12 min, until golden

  7. Transfer to a cooling rack and let the cheesy crackers cool down for a few minutes.

  8. Enjoy!

  • I like the crackers to be quite flaky, so I roll the dough a few times, fold it and roll it again. I do this three times, and if you have the time and patience, you can repeat the process a few extra times.

  • Feel free to use your preferred Cheddar/Gouda/Edam/Provolone/Fontina or anything similar.

  • You can use green olives, black olives, or, as I usually do, a mix of both.

  • Ideally, try to use virgin olive oil, but if if you don't happen to have that, sunflower or rapeseed oil will do the job.

  • Once they cool down completely, they can be kept in an air-tight container at room temperature, for about a week.

  • You can enjoy them as they are, or pair them with your favourite cream soups, dips or charcuterie boards.
