Flapjacks are popular British sweet treats. They can be made chewy or crunchy, they require only a few ingredients and take very little time to make.
Traditionally they are made with rolled oats, butter, sugar and golden syrup.
This recipe is designed to be Gluten-free and Dairy-free, but if your diet allows you to have dairy, then feel free to use butter instead of the dairy-free alternative. You can add dried fruit such as raisins, cranberries, apricots or even almond flakes if desired.
Prepping, mixing and baking shouldn't take more than 30 minutes, so I dare describe this as a quick recipe.
You will need:
3 small apples, grated
3 cups of oats (240g)
100g golden syrup
100g dairy-free spread/ butter
1 tsp cinnamon
30g raisins/sultanas (optional)
How to:
Grate the apples and simmer them in a pan for a few minutes,
Add the cinnamon
Add the golden syrup
Add the dairy-free spread/butter
Add the oats and dried fruit and mix well for a minute
Pour the mixture into an oven dish (20X20cm baking tin would be ideal) coated with baking parchment
Press the mixture lightly with the back of a spoon, making sure it's even
Bake at 180C/160 fan/gas mark 4 until golden-brown (about 12-15 minutes)
Cut it into squares, rectangles, or whatever other shapes you can make; they are equally acceptable, I'm not judging you.
Enjoy!
I prefer the flapjacks a bit chewy, but if you want them to be a bit crispier, bake them for a few minutes longer. If you're not a fan of dried fruit, that's ok, you don't have to add them to this recipe.
