A super easy recipe for delicious clementine jam, packed with flavour.

You will need:

25 medium-sized clementines (2kg with peel/1.6 kg peeled and chopped)
juice from 1 medium-sized lemon
500g caster sugar
2 cups of water

How to:
Peel and slice/chop the clementines into small cubes and remove any seeds
Add the clementines, 2 cups of water, the lemon juice and sugar to a pan
Bring the pan to a boil then let it simmer
Stir occasionally with a wooden spoon or spatula
Simmer for 35-40 minutes, or until it becomes thick
Remove the pan from the stove and leave it to cool slightly
Put the jam into your sterilised jars of choice and seal it with the lids
Serve this delicious jam with toasted bread, croissants and biscuits or use it to make your favourite pastries or cakes.
Enjoy!

The jars will last, if kept in a cool dry place for quite a long time (up to six months), but, ideally keep this one in the fridge (if possible).
This delicious clementine jam is great on toast and it works well as an accompaniment for charcuterie boards, especially with Manchego, Edam, Gouda and Brie
If you want a bigger batch of this jam, just double/triple the quantities
