Time for another dram!
A Romanian Single Malt, part of Carpathian's Spanish and Portuguese Wine Cask Collection.

A bit about
First matured in ex-bourbon first-fill casks and finished in ex-sherry (Pedro Ximenez) casks, this Carpathian Single Malt has 46% ABV, a beautiful natural copper colour, and is non-chill filtered.
The Pedro Ximenez Cask Finish is part of the Spanish and Portuguese Wine Cask Collection, along with Oloroso, Tawny Port, Madeira, Amontillado, Fino, Palo Cortado, Moscatel and Ruby Port Cask Finish.
After trying the Feteasca Neagra Cask Finish and the Barolo Cask Finish, I feel like I want to try all of the Carpathian Single Malt whiskies as so far, they've been delicious.

Time to try it
Nose: Very sweet with raisins, oak, and a bit of tobacco, you can instantly feel the PX influence
Palate: Pleasantly sweet, rich, with vanilla, toffee and dried fruit (figs and apricots)
Finish: Medium, complex, with baked apples and a hint of cinnamon

Pros and Cons
If you're looking for a complex whisky, great for sipping, then this one will not disappoint.
If you're looking for a peated whisky, you will have to skip this one as it has no trace of peat.
I prefer the Pedro Ximenez Cask Finish neat, but if you feel the need to add anything to it, I would recommend a few drops of water rather than ice.

In Conclusion
For me, the Pedro Ximenez Cask Finish is another delicious Carpathian Single Malt whisky I'm happy to have stumbled upon.
I found my small 20cl bottle in the duty-free as I was leaving Romania, but if you want to give this whisky a try, you can find the 70cl bottle, priced around £60, here.
