Time for another dram!
A limited Edition Christmas Release from Bimber Distillery, Santa's Edition 2025 is a Single Malt London Whisky finished in a Pedro Ximenez-Sherry Cask, with 57.3 % ABV and a vibrant dark gold natural colour.

Time to try it!
Nose: Packed with a beautifully fragrant aroma, with raisins, plums and sherry sweetness
Palate: Sweet and rich, with sultanas, dried figs, toffee, honey and cinnamon
Finish: Long, with ginger spice, cinnamon and a slight pepperiness. A fair amount of oak comes through to the very end, along with a bit of dryness.

Pros and Cons
The PX cask has certainly made its impact on the spirit. It feels like a Christmas dessert paired with a glass of sherry, all in one bottle. It's warming, delightfully sweet and with a good amount of spiciness.
For me, this one is beautiful for any time of the year and certainly ideal for the festive season. I much prefer this neat, and haven't attempted any cocktail recipes with it as I've enjoyed it too much exactly as it is.
