Time for another drink!
A premium Honzojo Sake from Kenbishi Shuzo Brewery, Hyogo Prefecture, Japan
Said to have been founded before 1505, Kenbishi is considered to be one of Japan's oldest breweries, still using wild yeast and natural fermentation.

Time to try it!
Lovely nose but even more beautiful on the palate.
Full-bodied with rich notes of steamed rice and stewed apples, it's an absolute delight whether served chilled, warm or at room temperature. It easily became one of my new favourite sakes, pairing fantastically well with grilled fish, miso and teriyaki-based dishes.
With a 70% polishing ratio, SMV +0.5 Acidity 2.0, it has a pale yellow colour and 17% ABV, but feels way less than that; you'll easily go through a bottle before you know it.
Found this little (180 ml) bottle at the Maison du Whisky Shop at Whisky Live Paris.
It can also be found in a 900 ml bottle option, although neither are easy to find in the UK.
If you want to try a few other sake varieties, you can find a few here.

As always, please drink responsibly.
