A highly delicious and super simple dish, best served with crusty sourdough or toasted seeded bread.
Creamed Spinach with Fried Eggs and Crispy Fried Onions
You will need:
700g fresh or frozen spinach
1 white onion, diced
1 clove garlic, crushed and minced
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp chilli flakes
1 tsp freshly chopped dill
3-4 tbsp all-purpose flour/gluten-free flour
2 tbsp sunflower/olive oil for frying
20g crispy fried onions
1 or 2 eggs, fried
1/2 cup of water/milk/dairy-free milk
How to:
Bring a large pan of water to a boil and add the fresh spinach. Cook the spinach for 5 minutes.
Drain the spinach, then chop it ( If you're using frozen spinach, defrost it and drain it)
Heat the oil in a pan then add the chopped onions. Cook the onions for a few minutes.
When the onions have softened, add the minced garlic, chilli flakes and black pepper. Cook for another minute.
Add the chopped spinach and mix well.
Mix the flour with either water, milk or coconut milk (depending on preference and dietary requirements). Add the flour mixture to the pan and stir continuously.
Cook for a further 4-5 minutes while stirring continuously.
Remove the pan from the stove, place a generous amount of the creamed spinach in a bowl or plate
Fry one or two eggs and place them on top of the spinach
Sprinkle the crispy fried onion on top of the spinach and the eggs
Enjoy!
This dish can be made gluten-free and it will be just as delicious. The only items which need swapping are the flour and crusty bread.
You can add coconut cream, single cream or creme fraiche after adding the flour (after step 6), for an even smoother spinach dish.
This Creamed Spinach Recipe can also be made dairy-free if using any dairy-free milk or water to thicken the sauce as well as coconut cream.
If you're not a fan of crispy onions, you can omit them or replace them with toasted mixed seeds.
