Delicious flapjacks, packed with flavour, super easy to make and ready in about 30 minutes.
In all fairness, it will take a while longer for it to cool down, but making and baking takes roughly half an hour. I am a big fan of carrot cake, a big fan of flapjacks, so, by the powers combined, here we are.
This is a recipe for British Flapjacks which are made with rolled oats. In other parts of the world it's sometimes called an oat slice, oat bar or even a cereal bar.
Carrot Cake & Apple Flapjacks Recipe
You will need:
5 cups oats
2 grated carrots (140g)
1 grated apple
150g butter
80g raisins/sultanas
50g cranberries
150g golden syrup
60g brown sugar
1 tsp cinnamon
pinch of nutmeg
1 tsp vanilla flavouring
How to:
Preheat the oven at 180C
Melt the butter in a saucepan
Add the brown sugar, golden syrup and stir
Add grated carrots and apple, stir and leave to simmer for 1-2 minutes
Add the cinnamon, nutmeg, raisins and cranberries and simmer for 1 minute
Add the oats, stir some more and remove the pan from the stove
Put the mixture in a 10'x8' oven tin lined with baking parchment
Bake for 18-20 minutes or until golden brown on top
Leave on a cooling rack until completely cooled down
Slice and enjoy
Make sure you leave it until it has completely cold before slicing, otherwise, it will be quite crumbly.
Feel free to use only raisins or only cranberries, to add chopped walnuts as well in the mix or to omit dried fruit and nuts altogether.
If you want the flapjacks to be a bit more crispy, you can leave them for an extra 2-3 minutes in the oven. I use a normal oven, so if you use a fan-assisted one, baking times may vary a bit so please check after 16-18 minutes.
This recipe can be made dairy-free if replacing the butter with dairy-free spread or vegan butter.
Oats are naturally gluten-free, but cross-contamination happens, so please make sure you check the label of the brand you are using to be 100% sure if you need this recipe to be gluten-free.
How long do these flapjacks last?
If stored in an air-tight container at room temperature they will last for about a week.
