Spicy Bean Wraps - Quick & Easy Recipe

Looking for a quick flavour-packed lunch? Give this spicy bean wrap a try! It's bursting with flavour, and packed with protein and fibre to power you through the afternoon.
You will need:
1 medium chopped tomato (or 5-6 cherry tomatoes or plum tomatoes)
1 can red kidney beans (400g can, 240g drained weight)
1 red onion, diced
4-5 regular tortilla wraps (can use 2 large ones if available)
3 garlic cloves, crushed and diced
1/4 tsp ground pepper
1/2 tsp paprika
1/4 tsp oregano
1/4 tsp ground cumin
1/4 tsp cayenne pepper
1/2 tsp salt
100g grated smoked cheese
1tbsp oil for frying
optional sliced bell peppers/celery stalks

How to:
Heat the oil in a frying pan over medium heat. Add the diced onion and peppers/celery if using any, and fry for 1-2 minutes
Add the garlic and spices. Stir everything and cook for another 1-2 minutes.
Add the red kidney beans and chopped tomatoes, turn the heat down slightly and let it simmer for 7-8 minutes. You want the sauce to thicken up so the wraps don't get soggy
Warm up the tortilla wraps as per their instructions (either in a pan or in the microwave)
Spoon 1/4 or 1/5 of the spicy bean mixture into the centre of each wrap, then sprinkle some of the grated smoked cheese on top
Tuck the ends of the tortilla in and roll it up tightly. For an extra crunch, place the sealed wrap back into the pan for a minute on each side until golden brown and crispy.

If you have a premade taco or fajita seasoning mix, feel free to use it instead of adding oregano, cumin and cayenne pepper and reducing the amount of salt.
This recipe makes enough filling for 4 regular-sized wraps, but if you decide to add some bell peppers and celery, you might need one or two extra ones.
This one is a make-ahead-friendly recipe, as the bean mixture tastes even better the next day. Store the leftover filling in an airtight container, or the ready-made wraps and enjoy them as they are or heat them up when you're ready to eat.
For a bit of freshness, right before folding them, you can squeeze some fresh lime juice over the filling or add a dollop of sour cream or Greek yoghurt
