Peach and Coconut Loaf Cake (Gluten-Free & Dairy-Free Recipe)


Peach, Coconut and Cinnamon Loaf cake

This Peach and Coconut Loaf Cake Recipe makes a very fluffy cake with a lot of flavour. Like most of the recipes here, it is dairy-free and gluten-free, and as always, if your diet allows, you can use butter and plain flour and the results will be pretty much the same.


As you might have noticed from the previous recipes, I do love cinnamon and I try to add it to as many recipes as possible, therefore this one contains cinnamon as well. Feel free to omit it if it's not for you, but, if your tastebuds allow, please add it to the mix as it will surely enhance the flavour of this fluffy cake.


I prefer the slices to be smaller so I usually prefer using two loaf tins instead of one. If you opt for one loaf tin, the baking time will be closer to 40 minutes and it will require a bit more time to cool down.


Ingredients:

  • 2 eggs

  • 1 cup sugar

  • 1 cup desiccated coconut

  • 2 tsp vanilla extract

  • 180g dairy-free spread/butter

  • 200g peaches (fresh or tinned), cut into small cubes

  • 1 tsp baking powder

  • 1 cup gluten-free flour

  • 1 tsp cinnamon


How to:

  1. Preheat the oven to 180C/gas 4

  2. Line two bread/loaf tins with baking parchment.

  3. Mix the eggs, sugar, coconut, vanilla extract, dairy-free spread, and peach cubes in a bowl.

  4. Add the gluten-free flour, baking powder and cinnamon and mix to a smooth consistency.

5. Divide the mixture equally between the two bread tins and bake at 180C/gas4 for 35-40 minutes, on the middle rack of the oven


6. Remove the cakes from the oven and do the toothpick test (a toothpick inserted in the centre of the cake comes out clean)


7. Leave the cakes to cool down in the tins for about 5 minutes then transfer to a cooling rack until completely cool.

I admit, the ones above are not the best looking loaves out there, but the last few times I made this recipe, after reaching the results I wanted, I completely forgot to take any pictures, so here we are. They might not look fantastic, but they sure taste amazing, and a few slices of this peach and coconut cake will go great with your favourite cup of tea or coffee
