Orange and Cinnamon Cookies (Gluten-Free & Dairy-Free Recipe)

If you've tried the drunk almond cookies, you probably got left with 3 spare egg yolks you had no idea what to do with. Here's an idea. You're already in the kitchen, the oven is already on, and chances are high that you have the rest of the ingredients so why not make batch no 2 of cookies?

Orange and Cinnamon Cookies ingredients

What you'll need:

  • 3 egg yolks

  • 1 cup gluten-free self-rising flour

  • 1/2 cup sugar

  • orange zest and juice from 1 orange

  • 1/3 cup dairy-free spread

  • 1 ts cinnamon


How to:


Make sure the oven is preheated at 180C/gas 4 and you have 2 trays lined up with baking parchment before you start as it makes life easier.

Mix all ingredients (add half a teaspoon of baking powder if you're using plain flour making sure no orange pips get lost in the batter since they can be sneaky like that).

Take half a tablespoon of the mix for each cookie and place it on the above-mentioned trays and bake for 12-15 minutes, until golden brown. Leave them to rest for about 15-20 minutes and then they'll be ready to be destroyed, no crumbs to be found.

They taste a bit like gingerbread cookies for obvious reasons of cinnamon and orange being in the mix but they are way lighter in both texture and flavour.

They last in your air-tight container/jar of choice for 3-4 days if you have the heart to leave them there all alone for that long.
