A genuinely simple and easy recipe for delicious Orange and Cinnamon Cookies. They are not overly sweet and go perfectly well with your favourite cup of tea or coffee.
If you've tried the drunk almond cookies, you probably got left with 3 spare egg yolks you had no idea what to do with. Here's an idea. You're already in the kitchen, the oven is already on, and chances are high that you have the rest of the ingredients so why not make batch no 2 of cookies?
Orange and Cinnamon Cookies (Gluten-Free & Dairy-Free Recipe)
You will need:
3 egg yolks
1 cup gluten-free self-rising flour
1/2 cup sugar (100g)
orange zest and juice from 1 orange
1/3 cup dairy-free spread
1 tsp cinnamon
(1/2 tsp baking powder if using plain flour)
Preheat the oven to 180C/gas 4
Line 2 trays with baking parchment
Mix all ingredients (add half a teaspoon of baking powder if you're using plain flour making sure no orange pips get lost in the batter since they can be sneaky like that).
Take half a tablespoon of the mix for each cookie and place it on the above-mentioned trays.
Bake for 12-15 minutes, until golden brown.
Leave them to rest for about 15-20 minutes and then they will be ready to enjoy
They taste a bit like gingerbread cookies because cinnamon and orange are in the mix but they are way lighter in texture and flavour.
They last in your air-tight container/jar of choice for 3-4 days if you have the heart to leave them alone for that long.
I usually make these cookies gluten-free and dairy-free but you can use plain flour and butter if your diet allows and these cookies will be just as delicious.
I make the Orange and Cinnamon Cookies and the Drunk Almond Cookies quite often throughout the year, but they seem to be a massive hit around wintertime when orange and almond flavours seem to be more in demand.
