A super easy recipe for highly flavorful brownies.
They take around 40 minutes to prep and bake and a couple of hours to cool down.
You will need:
2 eggs
180g flour
240g cherry preserve
40g cocoa powder
7g baking powder
130g butter or dairy-free alternative
30 ml milk
1 tsp rum flavoring
40g caster sugar
How to:
Pre-heat the oven to 180C/160 fan/gas mark 4
Line a brownie tin/ baking tin (10'x10') with baking parchment
In a large bowl mix the butter, eggs and sugar until you obtain a smooth consistency
Add the cherry preserve, rum flavouring and milk and mix
Add the cocoa powder, mix well, add the flour and baking powder and mix well
Pour the batter into the lined brownie tin and bake at 180C/Gas4 for 20-25 minutes
Remove the brownie tin from the oven and leave the brownie to cool down completely
Slice the brownie as desired and enjoy!
You can use fresh (pitted and halved) cherries if they are available, but make sure to add an extra 80-100g of sugar if choosing the fresh version.
For even more texture, you can add a handful of dark chocolate chips to the mix, or sprinkle them on top of the batter, just before you place the tray in the oven.
Kept at room temperature in an air-tight container and they will last for 3-4 days
