Pear, Plum & Chocolate Chip Cake
You will need:
2 eggs
2 pears
8 plums
1 tsp baking powder
50g milk or dark chocolate chips
150g sugar
125g butter/dairy-free alternative
170g plain flour
vanilla extract/flavouring

How to:
Pre-heat the oven to 180C/ gas 4
Line the bottom of a 9inch cake tin with baking paper and use a teaspoon of butter/dairy-free spread to butter the edges
Slice the pears in half and core them, then chop them into small cubes
Slice the plums in half, remove the stones, then chop the plums into small cubes
In a large bowl mix the butter and sugar
Add the vanilla extract, and eggs and mix
Add the flour and baking powder and mix well
Add the chopped plums, chopped pears and chocolate chips and mix gently
Pour the batter into the cake tin and bake at 180C/gas 4 for 35-40 (minutes or until a toothpick/wooden skewer inserted in the middle of the cake comes out clean)
Remove the cake from the cake tin and leave it to cool down completely on a cooling rack before slicing
Enjoy!

Make sure to wait for the cake to be completely cooled down, otherwise it will be crumbly

This recipe can be made gluten-free as well as dairy-free if substituting plain flour and butter for their alternatives and using dark (dairy-free) chocolate chips
