Green Apple Kimchi

green Apple Kimchi  ingredients
  • You will need:


  • 1kg green apples, peeled, cored and sliced

  • 3 small garlic cloves

  • 1/2 tsp ginger powder or grated fresh ginger

  • 4 tsp gochugaru (Korean red pepper flakes)

  • 1 tbsp fish sauce (or 2 tsp soy sauce or miso for the vegan version)

  • 3 tsp sugar

  • 1/2 tsp salt


Green Apple Kimchi

How to:


  1. Peel, core, and slice the apples into 1/2 cm thick slices

  2. In a bowl, mix all ingredients apart from the apples

  3. Add the apples and mix, making sure that each slice is fully covered

  4. Place the apples in an 800 ml sterilised jar or two 500 ml ones

  5. Gently press the apples to remove the air bubbles

  6. Partially cover the jar with the lid and leave it to ferment for 1-2 days

  7. Press the top at least once a day with a wooden spoon, to remove the air bubbles.

  8. When it starts fermenting, store the jar in the fridge to slow down the fermentation
