A quick kimchi recipe, ready in no time
If you're looking for a Kimchi recipe a bit closer to the traditional version, give this a try.
If you're willing to experiment with a sweeter kimchi, read below:
Green Apple Kimchi
You will need:
1kg green apples, peeled, cored and sliced
3 small garlic cloves
1/2 tsp ginger powder or grated fresh ginger
4 tsp gochugaru (Korean red pepper flakes)
1 tbsp fish sauce (or 2 tsp soy sauce or miso for the vegan version)
3 tsp sugar
1/2 tsp salt
How to:
Peel, core, and slice the apples into 1/2 cm thick slices
In a bowl, mix all ingredients apart from the apples
Add the apples and mix, making sure that each slice is fully covered
Place the apples in an 800 ml sterilised jar or two 500 ml ones
Gently press the apples to remove the air bubbles
Partially cover the jar with the lid and leave it to ferment for 1-2 days
Press the top at least once a day with a wooden spoon, to remove the air bubbles.
When it starts fermenting, store the jar in the fridge to slow down the fermentation
